After 11 years of being Paul Bocuse's assistant director, Joël Salzi went on to open his restaurant.
He now strikes again with "Les Fines Gueules", located in the heart of the old Lyon, the food can be summed up in one word, just like the surroundings: authentic! The classical bistro style, priced moderately but overwhelmingly good.
It is in a warm and cozy atmosphere that you will be able to please your palate with some of the most classical Lyonnaise cuisine: Quenelle (pike soufflé), Terrine, Poached eggs in a red wine sauce, Pig's trotter, Pork filet minion, Tartare steak, Andouillette gratin, and much more…
The wine selection is designed to magnify your meal at a reasonable cost.
The dessert, (especially the ice cream and meringue "Vacherin", ou favorite) is the climax, period.

Food is sourced locally, working directly with local producers to obtain fresh ingredients such as meat, eggs and vegetables, mainly from neighbouring departments (Ain and Isère in particular). The restaurant has also been recycling organic matter for over two years, working in partnership with a specialist company to produce compost. The restaurant also works closely with winegrowers from neighbouring regions such as Beaujolais, the Rhône Valley and Burgundy.
